Grilled chump chops

grilled chump chops
                 
Serves 4
4 lamb or pork chump chops
1 clove garlic, peeled
60 g soft butter
1 tbsp chopped parsley
1 lemon, preferably organic
salt and pepper
1 Heat the Aga grill pan on the floor of the ROASTING OVEN until it is very hot
2 While the pan is heating up , rub each chops with the garlic and season with salt and pepper.  Place the grill pan on the BOILING PLATE and put in the chops. 

Transfer to the floor of the ROASTING OVEN for 3-4 minutes (pork will take a little longer), then turn the chops over and cook for a further 3-4 minutes.
3 Crush the garlic and mash it into butter with the parsley and season with the juice and zest of the lemon and salt and pepper.
4 When the chops are cooked, take the grill pan out of the oven and put a small knob of the garlic butter on each chop.  Rest for 5 minutes and serve with a green salad and crusty bread.

Conventional Cooking:
Heat a grill pan on the hob and cook the entire dish on hob.
