Grilled chump chops

| Serves 4 | ||
| 4 lamb or
pork chump chops 1 clove garlic, peeled 60 g soft butter 1 tbsp chopped parsley 1 lemon, preferably organic salt and pepper |
1 Heat the Aga
grill pan on the floor of the ROASTING OVEN until it is very hot 2 While the pan is heating up , rub each chops with the garlic and season with salt and pepper. Place the grill pan on the BOILING PLATE and put in the chops. |

| Transfer to the floor of
the ROASTING OVEN for 3-4 minutes (pork will take a little longer), then
turn the chops over and cook for a further 3-4 minutes. 3 Crush the garlic and mash it into butter with the parsley and season with the juice and zest of the lemon and salt and pepper. 4 When the chops are cooked, take the grill pan out of the oven and put a small knob of the garlic butter on each chop. Rest for 5 minutes and serve with a green salad and crusty bread. Conventional Cooking: |
